Food
As promised, here is my favorite corned beef recipe! I LOVE making this every St. Patrick's Day.
1 (3-4 pound) corned beef brisket with seasoning packet
1 onion, peeled and quartered
4 cloves garlic, minced
1 bottle (12 ounces) of your favorite beer (plus an extra bottle for drinking yourself 🍻)
4 cups broth (or water)
1 bay leaf (optional)
1 teaspoon whole black peppercorns (optional)
1 head of cabbage, cut into wedges
4-6 medium potatoes, scrubbed and quartered
4 whole carrots, washed and cut into large chunks
Instructions:
Rinse the corned beef brisket under cold water and pat it dry with paper towels.
Place the onion quarters, minced garlic, potatoes, and carrots in the bottom of your slow cooker.
Pour the beer and broth (or water) over the vegetables. Add the bay leaf and whole black peppercorns (if using) and stir together.
Nestle the corned beef brisket in the veggies in the slow cooker, making sure the corned beef is submerged (or very close to submerged).
Sprinkle the seasoning packet (included with the corned beef) over the brisket.
Cover the slow cooker and cook on low heat for 8 hours, or until the corned beef is tender.
About 1 hour before the corned beef is done, add the cabbage wedges to the slow cooker, arranging them around the brisket.
Cover the slow cooker again and continue cooking until the cabbage is tender and cooked through.
Once everything is cooked to perfection, remove the corned beef, cabbage, potatoes, and carrots from the slow cooker and transfer them to a serving platter.
Slice the corned beef against the grain and serve it alongside the cabbage, potatoes, and carrots.
Enjoy your St. Patrick's Day feast with your favorite dijon/brown/whole grain mustard or horseradish sauce on the side!

For the last five years, I've been a member of a women's connection group called Polka Dot Powerhouse and it's not hyperbole to say that the group has changed my life.
Just in our local chapter we have 200+ women, and over 3000 across the globe. Many are business owners, but many are domestic engineers, retirees, and nine-to-fivers. What we all have in common is the desire to expand our circles and build deep relationships.
For me, I've found that it's hard to make friends as an adult without kids and without a traditional workplace. PDP has given me a venue to show up as my authentic self and a framework to meet new women and develop new friendships over time. I really can't speak highly enough of this group!
AND I'm going to be our group's speaker for the month of April!!! I'll be giving a presentation including EASY, PRACTICAL tips for how to add exercise and meal planning/prep into your life. We all know these are things we should do, but in reality, it can be hard to execute. But I've spent the last 20 years figuring out how to make a healthy lifestyle also an EASY lifestyle, and I want to share that knowledge with you!
You'll leave with a plan and the confidence that you can execute that plan. This isn't high-level, fancy personal trainer/nutrition coach stuff. This is "busy human with lots of competing priorities" stuff.
